Lentil Farro Soup

The holidays are over and now is that time when everyone starts thinking about eating more healthy foods.  For me, December was a whole month of eating chocolate and cookies and cheesy potatoes. It’s time to get back on track and eating healthy again!

I love podcasts.  And one of my favorite health podcasts is the Foodist Podcast with Darya Rose.   One of the most important things she teaches is to cook at home.  Eating out is expensive and unhealthy, and she maintains that cooking at home doesn’t have to be hard.  Her podcast is full of tips on how to make cooking easier and more healthy. It makes me feel that even I can do it!

This is one of my favorite recipes that I got from her site.  This lentil farro soup is delicious! It’s filling and full of good things.  Her original recipe calls for umeboshi paste, which I could not find anywhere.  I substituted that with a tablespoon of balsamic vinegar and it’s absolutely delicious!  This soup tends to get very thick, especially as it sits for a while. If that happens, just add water and voila!  You will be good to go.

Ingredients:

  • 1 tbs olive oil
  • 1 small onion, diced
  • 5 large carrots, sliced
  • 3 cloves of garlic, minced
  • 2 sprigs of thyme
  • 8 c of vegetable broth
  • 1 1/2 c lentils, rinsed
  • 1 c farro, rinsed
  • 3 bay leaves
  • 1 bunch of kale, chopped
  • 1 tbs balsamic vinegar
  • Salt and pepper to taste
  • Parmesan cheese (if desired)

How to Make the Soup:

  1. In a large stockpot, heat the olive oil over medium-high heat.  Add onion and carrots and saute until tender. Add garlic. Saute for 3 minutes.
  2. Add in broth, thyme, lentils, farro, and bay leaves.  Bring to a boil. Reduce heat and simmer for 30 minutes.
  3. Remove bay leaves and thyme stems.  Add in kale and balsamic vinegar. Stir to combine.  Add salt and pepper to taste. Ladle into bowls and top with parmesan.  Enjoy!
