5 Quick and Easy Recipes for a Busy Holiday Season

The holiday season will be soon upon us and with it comes a rash of parties, shopping, baking, and general festive making.  Not to mention, all of the expenses that the holiday brings. That’s why it’s better, and healthier, to eat at home. But who has time to make dinner with all of the other things that have to get done?

These recipes are my go-tos when things get hectic around my house.  I scoured the internet looking for just the right ones. My look fors?  They must use everyday ingredients and take no more than 20 minutes to put together.  And even if you don’t have holiday activities going on, these dinners can free up time for you to do anything you want – like reading a good book!  And who wouldn’t love more time for that?

One pot spicy Thai noodles – Domestic Superhero

My family loves this dish and I love it because there is only 1 pot to clean up when you’re done!  Everything goes into the pot at once, which is also nice because you don’t have to worry about cooking the noodles ahead of time.  We love spicy and this dish delivers. If your family isn’t as fond of spicy you can hold back on the sriracha sauce. This dish can be eaten hot and cold.  I love to take these leftovers to work.

Brown sugar balsamic glazed shredded pork – FOOD52

My son’s favorite dish and so easy to make.  I especially love this recipe because the balsamic vinegar gives this pork a great taste and makes the house smell so delicious.  I serve these sandwiches on slider rolls with a side of sweet potato fries (I use Alexia brand). Simply delicious! And there are usually leftovers, so bonus – dinner for two nights!

Easy sausage and broccoli pasta – Once Upon a Chef

I originally wrote about this recipe this summer.  It’s a light dish and easy to make; plus I added fresh grape tomatoes which were in season.  But honestly, this dish is delicious no matter when you make it and is a good way to get your kids to eat their veggies.  I make this even when I have company and it’s always a hit. The one downside to the dish, everyone loves it so much, you won’t have any leftovers!

Turkey bacon and avocado grilled cheese – Tidy Mom

Here’s a delicious twist on a family favorite staple.  I sometimes get stuck making the same old grilled cheese and tomato soup, but this is not that boring sandwich.  It is stuffed with everything I love – turkey, bacon, cheese, and basil, not to mention avocado. This would be a great sandwich to make with leftover Thanksgiving turkey as well!  Use whatever bread and whatever cheese tickles your fancy. The possibilities are endless!

Slow cooker beef and cheese pasta – The Cooking Jar

This is the perfect comfort food casserole.  It’s chock full of noodles and beef and cheese and serves up warm, gooey and delicious.  The perfect ending to a hectic and cold winter day. Crockpot meals are the best because all the work is already done and I come home to a ready to go dinner.  Enjoy!
