French Onion Soup: A Hearty Soup for a Cold Winter Night

Every Christmas Eve, my extended family holds a huge party with all the fixings.  There are delicious appetizers, a full meal and of course, Christmas cookies!  Dinner is usually held later in the evening so that everyone can get their last minute wrapping done and we can all go to church.

A late dinner means that I need to make something that will tide my family over until then.  And I think I’ve told you before that my kids are pretty picky about what they will and will not eat.  

That is why this delicious French Onion Soup is my go-to recipe.  It is hearty and filling and keeps everyone going until their big dinner.  And – it’s something that everyone loves to eat! My kids and husband love this savory soup topped with that gooey melted cheese!


The secret to this recipe is to cook the onions for a long time.  They need to really seep into the broth in order to give it that amazing taste.  We also like to go a little heavy on the pepper. It gives it a little kick.

Ingredients:

  • 2 tbs olive oil
  • 2 large red onions, thinly sliced
  • 2 large sweet onions, thinly sliced
  • 1/2 tsp sugar
  • 1/2 tsp ground pepper
  • 1/4 tsp salt
  • 1/4 c dry white wine
  • 8 c beef broth
  • 2 sprigs of thyme
  • thinly sliced swiss cheese
  • loaf of French bread, cut into cubes

How to Make the Soup:

  1. In a Dutch oven, heat olive oil over medium heat.  Add onions and saute until tender. Stir in sugar, pepper, and salt.  Reduce heat and cook for 20 minutes, stirring frequently.
  2. Increase heat to medium-high and saute for 5 minutes or until onion is golden brown.  Stir in wine. Cook for 1 minute.
  3. Add broth and thyme.  Bring to a boil. Cover, reduce heat and simmer for 2 hours. Discard thyme.
  4. Preheat broiler.  Place bread in single layer on baking sheet.  Bake for 2 minutes, turning after 1 minute.
  5. Place oven-proof bowls on baking sheet.  Add 1 cup of broth. Top with bread cubes and swiss cheese.  Broil 3 minutes or until golden brown. Enjoy!
