The BEST Pumpkin Bread – EVER

Nowadays, pumpkin spice can be a little overdone.  It has hit products that should NEVER be pumpkin-spiced, even in October!  Pumpkin spiced Pringles? Or pumpkin spiced gum? Pumpkin spiced hummus? Not really my thing.

But in our house, it’s not really fall until we get a cup of good pumpkin spiced coffee and a slice of the BEST homemade pumpkin spiced bread.  I love to bake this bread – it makes my whole house smell so good!

I’ve tried many recipes of different versions of pumpkin bread, but this has been the absolute best by far.   Sometimes I change it up by adding walnuts or chocolate chips; sometimes we just go straight up pumpkin. But either way, it’s absolutely delicious and a perfect complement to our morning coffee.  My daughter is especially fond of this bread, and even though she is away at college now, I still make sure to send her some every year.

This recipe comes from the AllRecipes.com site and is called Downeast Maine Pumpkin Bread.  In our house, we just call it the BEST pumpkin-spiced bread EVER!  Here is the recipe:

 

Ingredients:

1- 15oz can of pumpkin puree
4 eggs
1 cup of vegetable oil

⅔ cup of water

3 cups of white sugar

3 ½ cups of all purpose white flour

2 tsp baking soda

1 ½ tsp salt

1 tsp ground cinnamon

1 tsp ground nutmeg

½ tsp ground cloves

¼ tsp ground ginger

 

Directions:
  1. Preheat oven to 350 degrees.  Grease and flour two loaf pans.  
  2. In a large bowl mix together the pumpkin, eggs, oil, water and sugar until well blended.  In a separate bowl, whisk together flour, baking soda, salt and spices. Stir the dry ingredients into the pumpkin mixture until just blended.  Add chocolate chips or walnuts if desired. Pour into prepared baking dishes.
  3. Bake at 350 degrees for 50 minutes.  Bread is done when a toothpick inserted in center comes out clean.

 

Tip:  Make sure that you wrap it in aluminum foil when it comes out of the oven.  It will preserve the moistness of the bread.
